This recipe is quick, easy, and a favorite in our household when we are craving something delicious and fresh.

Your Ingredients:
- 1 pound large frozen shrimp, thawed, peeled, deveined & thoroughly rinsed
- 4 Tbs. butter
- 1 Tbs. Extra-virgin olive oil
- 4-5 cloves garlic, minced (or 1 heaping tsp. jarred, minced garlic)
- 1/2 cup white wine
- 1 1/2 cup cherry tomatoes, halved
- Juice of 1 lemon
- Coarse salt
- Fresh basil leaves
- Freshly grated parmesan cheese (optional)
Directions:
- Melt 2 Tbs. butter & 1 Tbs. oil in a large pan. Add garlic & tomatoes, & sauté for a minute.
- Add the remaining butter & wine to the pan, & simmer for 2-3 minutes until the tomatoes start to wilt.
- Add shrimp to the pan & season with a few light sprinkles of salt.
- Stir lemon juice in & let the shrimp cook a few minutes, until opaque.
- Stir in basil & stir a few more times until it’s wilted.
- Serve over fettuccine & top with fresh basil. Add some freshly grated parmesan cheese if you so desire.
